Jadis, red clawed crayfish or noble crayfish breed easily the rivers of the Haute-Marne because of the water quality. Saving these species from extinction was the element which encouraged the astaciculture to set up a farme in an old mill in Thonnance-les-Joinville, not far from the 'Mont' Source.
